First Fruits {Tomato Lentil Salad Recipe}

Our tomato plants bore their first fruits this weekend.  A.P. was the first to spot the ripe ones, although it could have been any of us.  We checked on them daily; more often than that sometimes, waiting for all of the green to disappear and the tomatoes to practically fall off the vines into our hands.  No tugging, no coercing, just a little wobble at the stem and off they came.

I washed and chopped the tomatoes while they were still warm from the sun.  I knew the plans I had for them.  Part of my Cinchspiration weight loss plan includes eating healthy fats, vegetables, and protein.  I replaced the bulgur wheat in the classic Tabouli recipe with lentils to add protein and created this Tomato Lentil Salad Recipe.

  • 3 tomatoes, chopped
  • 1 cucumber, chopped {remove seeds if desired}
  • 2 cups lentils, cooked {here is how to cook lentils}
  • 1 cup parsley, chopped and stems removed
  • 1/4 c lemon juice
  • 1/4 cup olive oil
  • 1 tablespoon salt
  • 1/2 tablespoon pepper
  • 1 tablespoon minced garlic

Mix tomatoes, cucumber, lentils, and parsley in a bowl.  Set aside.  Whisk together lemon juice, olive oil, salt, pepper, and garlic.  Pour over salad.  Enjoy!
