As you know, I went to the University of Georgia. It was there that I developed a love of pork barbecue that has only grown as I’ve gotten older. At my wedding, I think I surprised a few people by having the catering company haul in a giant grill so they could properly make the ribs I insisted be served for the occasion. My kids are the same way; A.P. devoured a pulled pork barbecue sandwich at his first birthday party. When I serve pork for dinner, they refer to it as “Our Friend The Pig“. Cows and chickens do not enjoy such affection around here.
I wish I could invite you all over for a special dish I am creating for National Pork Month, but my table just isn’t big enough. Instead I’ll post the recipe later this week – I am really proud of it and thrilled that I was asked to compete against other bloggers for the best recipe. As part of my participation, I received a new meat thermometer, which will come in handy since The US Department of Agriculture reduced the ‘done’ temperature of pork to 145° so it can look a little more pink than I’m used to and still be safe.
