Recipe Roundtable – Grilled Salmon With Lemon Caper Sauce

My brother is a fishing guide in Alaska.  That means he is the guy who takes rich people out on his boat and uses his sixth sense to find salmon in the Kenai River.  It’s a pretty sweet gig.

So is being his sister.  Our Dad is going to visit him this week, and it is with great and joyful hope that I await some freshly caught salmon so I can make this recipe.

Grilled Salmon with Lemon Caper Sauce

from Epicurious

3-4 salmon filets (remove skin)
2 lemons, juiced
1/4 lb butter
2 cloves garlic minced
4 T capers, rinsed
salt and pepper
flour

Grill salmon approximately 4 minutes on each side. While grilling, prepare the sauce in a small saucepan by allowing butter to melt. 

Add chopped garlic, add lemon juice, salt & pepper to taste and the capers. For added flavor, use a small amount of the lemon zest.

Thicken with a small amount of flour

Things I Love Thursday – Legos {And A Giveaway!}

Much like Snowmaeddon this winter, my kids had to get creative during the Great Heat Wave of 2011.  In search of some indoor fun, they decided to re-create the test track at LEGOLAND Discovery Chicago using a Carrera track and Lego cars.

So I read the story on Ninjago but it’s kind of long, so let me betacap it for you:

First master of Spinjitzu created Ninjago using four mystical weapons: the Nunchucks of Lightning, the Shurikens of Ice, the Scythe of Quakes, and the Sword of Fire. He entrusted the world and the weapons ton his two sons Sensei Wu and Lord Garmadon who promised to protect them, but then Lord Garmadon got all greedy and power hungry. His brother kicked his butt and banished him to the underworld where he became the ruler.  He wants to take another stab at getting the four weapons of power, but his bro {Sensei Wu} found four young ninjas that are prepared to learn the ways of spinjitzu. Only you and the ninjas can stop the rotten brother.

And by “you”; in all likelihood I mean your 6 to 11 year old son.

The Starter Kit includes:

Works For Me Wednesday – Five Things To Make When It’s Too Hot To Cook

It was HOT here last week.  Our neighbors, who are Cuban, said that Grand Rapids, Michigan was 5 degrees hotter than Havana.  Ay, caramba!

I had to come up with a week’s worth of ‘no oven’ meals.  Our house is really small which is good news in the winter and baking heats the whole house up; but when we’re trying to keep the house cool the oven just can’t be turned on. I made it through the whole week, with the help of one meal out of the home. 

Monday – Beef Roast

Here is my excellent recipe:

  1. Take a pork roast out of the freezer.  Defrost.
  2. Discover that is actually a beef roast.  Shrug, and throw it in a pie dish because nothing else fits in the little bitty toaster oven.
  3. Open a bottle of red wine to drink.  Realize that it is kind of gross.  Shrug again, and pour it in the pie dish with the beef.
  4. Open another bottle of wine.  Have a glass while the roast cooks at 375 for 1 hour and 15 minutes.

So I think that is a wine deglaze, or something.  It was SO good.  I just sliced it up and served it with a salad.

Tuesday – Fancy Sandwiches

I used the leftovers from the beef roast.  I sliced it very thin, then set out some cheddar cheese slices, mustard, mayo, horseradish, pesto, lettuce, and sliced tomato on plates and in little bowls, like they were guests. The secret here:  nice rolls.  Not just plain old bread.  My family was somehow touched that I bought special rolls for the leftover roast beef sandwiches.  It was cute :)

Wednesday – Breakfast

Bacon, eggs, tater tots (made in the toaster oven), OJ, and pancakes.  I make terrible pancakes.  Don’t judge.

Thursday – Picnic

A.P.’s last day of Vacation Bible School Sports Camp.  They served hot dogs, chips, and watermelon.  It was fantastic!

Not sure if Maybelle is feeling the Spirit or trying to catch a basketball here.

Recipe Roundtable – Taco Salad

I haven’t turned on my oven a week! And no; we haven’t gone out to eat every night.  I would love to, but I am afraid I won’t be able to pay off the debt to out new overlord, Consumer’s Energy.   I am seriously scared of our electric bill after weeks of constant air conditioning, so I am quickly putting together a list of “no oven” meals.  This global warming thing is apparently here to stay and Michigan is the new Tropics.  

Later this week I’ll share the rest of my meals with you, but the one for today is Taco Salad.  It’s easy and fresh.  Vegetables make an appearance, therefore it totally counts as a complete meal. 

You’ll need:

  • 1 lb. ground beef
  • 1 packet taco seasoning {I actually buy it in a larger package at Penzy’s.  We like our taco seasoning around here.}
  • 1/2 head iceberg lettuce {One of two acceptable times to serve iceberg, according to my husband.  The other is a Bleu Cheese Wedge salad.  Whatever.}
  • 2 tomatoes
  • 1/4 cup black olives
  • shredded cheese
  • other taco toppings, such as jalapeños, sour cream, cilantro
  • Salsa {We used to use Western Dressing, but it has  food dye in it and that is… totally another story}
  • Taco chips

Brown the ground beef and add the taco seasoning according to package directions.  Meanwhile, chop the lettuce, olives, tomatoes, and other toppings.

Set all toppings out on the table and let everyone make a salad to their liking.

Michigan Mom: What Bloggers Are Talking About This Week

Last week I had the pleasure of attending the Midwest Moms Media Brands and Bloggers Summit in Chicago and could not hide my pride over hearing the comment, “ANOTHER blogger from West Michigan?!” We were everywhere.

If you Tweet, you will appreciate that the hashtag for the conference, #bbsummit11, was trending in West Michigan Saturday.

We do more than just Tweet, though.  There is a lot of awesome going on here, and it’s high time you knew about it.

Recipe Roundtable – Peach Blueberry Cobbler

It’s almost time to pick blueberries! I can’t believe it’s been a year since we went!  In fact, we still have some blueberries in our freezer, so a few weeks ago I made a Peach Blueberry Cobbler to use them up.

Since my crashy hard drive ate my pictures, I have no proof.  You’ll just have to trust me that my husband, kids, father in law, mother in law, neighbor, and neighbor’s kid all loved it.  That’s a lot of love.  I served it with a little ice cream, just a couple of spoon-fulls, and it was wonderful.

Michigan Blueberry & Peach Cobbler (from Michigan Wines)

Streusel

  • 6 tablespoons butter
  • 3/4 cup all purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinamon
  • 1/4 teaspoon salt

Filling

  • 1 pound blueberries
  • 1 pound fresh peaches, pitted and sliced into thin wedges
  • 1/3 cup sugar
  • 3 tablespoons cornstarch

Preheat oven to 375 degrees.  Lightly grease or spray an 8×8 baking dish.  In a small bowl, combine streusel ingredients and work into crumb-like consistency.  Set aside.

Combine fruits in large bowl.  Mix in sugar and cornstarch and toss with fruit.  Place fruit mixture into prepared dish and evenly crumble streusel over top of fruit.  Bake for about 45 minutes or until bubbly and browned.
