Recipe Roundtable – wHOOPie pies. They’re awesome, baby!

We made some Whoopie Pies to get into the College Hoops spirit.  I filled out a bracket, but I don’t know what I am doing and it has suffered the same fate my Fantasy Football team did a few years ago – abandonment followed by complete and total failure.  Dick Vitale would be ashamed.

So I am no good at sports.  Who cares? I am good at baking things, and in the end, that’s what really matters.

I got this recipe from the Party BluPrints blog, which is super cute and you need to check it out.

WHOOPIE PIES

Cake Cookies

  • 1 box chocolate cake mix
  • 1/3 cup water
  • 3 tbsp. oil
  • 2 eggs

Filling

  • 1 stick butter
  • 1 8 oz. package cream cheese
  • 1 tsp. vanilla
  • 3 cups confectionersʼ sugar
  • 2 tsp. orange food coloring (They don’t sell orange food coloring in these parts.  I used 56 drops of red, and 14 drops of yellow.)

1. Preheat oven to 350°. Using a mixer, mix all cake ingredients together on low speed for 30 seconds and then on medium speed for 2 minutes. Using a small ice cream scoop (1 tbsp.), drop dough onto greased cookie sheet (leave 1 1/2 “ – 2” between each). Bake 8-9 minutes. Cool thoroughly on cooling rack.

Yes, as a matter of fact polka dots and stripes DO go together.

2. Prepare whoopie pie filling: in mixer, combine softened butter and cream cheese. Mix in vanilla. Slowly add confectionersʼ sugar, one cup at a time, mixing well. Add in food coloring and mix thoroughly.

3. Using small ice cream scoop, drop filling on center of underside of cake cookie, top with another cake cookie and apply a bit of pressure to distribute filling. Continue with remaining cake cookies until all whoopie pies are assembled.
