Welcome to Day Two of Big Binder’s “Get Out The Grouchies Giveaway Week”.

I maintain, that even in the middle of The Grumpy Season, Grand Rapids is still a fantastic place to live. One thing we can look forward to helping us get back to our happy place is LaughFest.  It’s a 10 day long Festival of Laughs to support Gilda’s Club, starting March 10. There are so many great family-friendly events at LaughFest this year, and because of great sponsors like Amway, (who has proudly been supporting the community where they have been doing business for over 50 years!) a lot of them are FREE.

Recipe Roundtable and a Yoplait GIVEAWAY

I got the February Blues.  Bad.  And guessing from the general demeanor of the few other human beings I have come in contact with lately, so does everyone else.  It’s just – the grumpy season.

But don’t you worry your grouchy little head about it any longer.  I threw on my Uggs and parka, braved blizzard-like conditions, and rounded us up some fun.  Well, mostly I just received stuff via FedEx but still.  The point is that we are going to have a GOOD TIME this week.

So everybody now! Toss aside those blankets you’re hiding under! Get up and get dressed! Everyone, give me 25 jumping jacks!

Wait, that’s not fun.  At all.  Let’s try something else. Please resume the couch potato position.

So the yogurt. I decided to stick with the store bought.  I was experiencing some guilt about this, and my sister gave me words of wisdom.  “My God, Jen.  It’s one freakin’ thing.  They’ll live”.

Indeed, they will live. They had a chance to sample Yoplait Kids last week, and loved it.  I was happy to see that there was no high fructose corn syrup, no artificial colors, no artificial flavors and no artificial sweeteners.  Want to learn more? Frugal Fun This Week

Well, hi there! Are you having a good week? Some people love snow days, and some people hate them.  Hopefully we are done for a while; or at least until Monday when the next storm is supposed to hit.

Fortunately, there is so much FREE this week you won’t lack for fun, even if there is no school.  Laugh in the face of $5.00 a gallon gas, my friends.  Frugal is how we roll!

Speaking of frugal; a few weeks ago we went to the Heritage Festival at the Grand Rapids Public Museum.  We had a good time! Please enjoy this short video while you bask in the glow of the FREE:

Tasty Tuesday – Chez Olga

Remember this weekend? Flowers were blooming, birds were singing.  It was spring.  For a brief, fleeting moment…

And today we had a snow day.

During our 36 hours of passable roadways and wearing only the inner layers of our three piece parkas, we decided to visit Chez OlgaWe’d been there before, and I literally ate so much trying to taste everything I was almost sick.  Think Homer Simpson, “So full.  So good. So much pain. Can’t.. stop…eating.

Realizing that I can visit any time I want, my strategy was a bit different this time.  Although I really wanted to get the Goat Stew again (Don’t judge.  I bet you’d like it if you tried it.), I decided to try a plantain sandwich.  Except the plantain was the ‘bread’, not the middle.  The middle some kind of salted beef.  It was delicious.

One thing I could not resist having again was the coleslaw.  It’s spicy and fresh. Really spicy.

And one more thing I couldn’t resist having again was the Haitian tea.  The key ingredient is ginger.  My taste buds are jumping up and down as I write this.  Settle down, guys.  We’ll go back.

A.P. is a huge fan of shrimp, so he ordered the shrimp and noodles.  The food is cooked with the amount of heat you want; and he didn’t want any heat at all.  Just the shrimp, and lots of it.  He didn’t love his dish though, because the shrimp had sauce on it, and he just wanted “Shrimp.  And noodles.”  Fortunately, Maybelle got a chicken and broccoli noodle soup she couldn’t finish because the bowl was HUGE so between that and eating half of my plantain sandwich, everyone was pretty darn happy.

Midway through the meal, A.P. started chatting up a couple at the table next to us.  They were clearly on a date.  Without kids.  I tried to reign him back in, but they were very nice, and we all started chatting.  It was so not the normal restaurant experience, but there is just a really friendly atmosphere at Chez Olga that is kind of contagious.  They were visiting from out of town, and like the good little Grand Rapids ambassador I’ve raised him to be, he insisted they visit Yesterdog before they left town.  We steered them towards Brewery Vivant instead, and bid them babay (which is pretty much ‘see ya’ in Creole).

Recipe Roundtable – Brined Chicken

I am so proud of my husband.  When we met, his diet ranged from Pizza Hut Meat Lovers Stuffed Crust all the way to Taco Bell Burritos (no onions).  Since then, I’ve seen him eat a vegan lentil casserole and seared Ahi tuna.  He adamantly refuses to eat iceberg lettuce.

He is a changed man.

Except… as it seems with all things in the Husband Department… we take two steps forward and one step back.  For whatever reason, he started rejecting chicken.  I tried stuffing the chicken with bacon and cheese.  He took another step back.  I tried Chicken Parmesan, only to have the plate pushed away.  He would try a bite, but just could not eat the chicken.

We thought perhaps his finely tuned palate had detected changes in chicken taste brought about by modern processing methods? Maybe that “sodium solution” isn’t such a good idea? I bought a $12.00 chicken that was, from what I understand, fed only choice bugs, slept on a Sealy Posturpedic Chicken Bed and required some sort of personal assistant to keep her feathers from falling into disarray.

Nope.

After trying and failing for literally years to find a chicken dish my husband would eat (I pick my battles so wisely, don’t I?), I have finally succeeded. And despite a mild dislike of Jamie Oliver’s snarky little self, it was his recipe that did it.

I’ve included his recipe, as well as my mistakes modifications.

Tray-Baked Chicken

Marinate the chicken in brine for at least two hours (overnight is best). It will become outrageously soft and juicy

For the brine: (I doubled this because I was nervous it wouldn’t be enough and the ingredients are all cheap)

1 quart water

2 Tbsp kosher salt

1/3 cup honey

3 cloves garlic, crushed (I used minced garlic)

2 sprigs fresh sage, leaves only (I used 2 tsp. dried sage leaves)

1/4 cup apple-cider vinegar (I used 1 part apple juice and 3 parts white vinegar)

Juice and zest of 1 lemon (I used lemon juice)

For the bake:

4 chicken breasts, bone in, skin on (I used boneless skinless because that’s what was on sale)

2 slices smoked bacon, finely chopped (I used this but would totally use pancetta next time)

3 sweet potatoes, scrubbed and thinly sliced (I didn’t use any sweet potatoes because it seemed weird)

4 medium potatoes, scrubbed and thinly sliced (I just used 6 baking potatoes, total)

1 medium onion, peeled and thinly sliced

4 cloves garlic, peeled and thinly sliced (Again with the minced garlic)

2 sprigs fresh sage, leaves shredded (Ditto with the dried sage leaves)

Olive oil

Sea salt and fresh black pepper

1²/³ cups chicken broth, preferably organic

2/3 cup heavy cream

1 cup grated Parmesan cheese

A few pats of butter

Directions:

1. Mix brine in a large bowl; add chicken. Cover with plastic wrap; refrigerate 2 to 8 hours.

2. Remove chicken; let come to room temperature. Drain chicken, discarding brine, and pat dry with paper towels.

3. Preheat oven to 350°F. In a roasting pan, toss the bacon, veggies, garlic, and sage with olive oil and a pinch of salt and pepper. Pour in broth. Cook 30 minutes.

4. Remove veggie pan from oven; pour in cream and sprinkle with pepper and Parmesan. Add chicken, dotting pats of butter on each piece. Cook 35 minutes, or until chicken is golden. (I didn’t catch the roasting pan part, so I ended up with two casserole dishes; either of which would have fed our family with leftovers.)

Serves 8. Per serving: 450 calories, 23g fat, 90mg cholesterol, 610mg sodium, 37g carbs, 24g protein, 5g fiber

Things To Do

It’s MELTING!! I cannot wait to get out there and enjoy this (relatively) Spring Like weather.  Fortunately, there is a lot to do this weekend.  Here are some suggestions to keep it on the cheap!

  • Burn off some steam Friday at Gymco where they are having a free family event from 6-9!
  • Pooh’s Corner in the Breton Village Mall will have a Snowbird Safari, complete with snakes. What is a Snowbird Safari without snakes? Nothing, I tell you.  This one has what it takes, and is free.
  • If you want to spend some time outside, head over to Meijer Gardens for their Winter Family Day.  It’s free if you have a membership; but if not, try the Grand Rapids Public Library and see if they have any passes to check out!
  • The Heart and Sole 5K is Saturday, and they have a kids fun run! I love that ‘race season’ is picking back up.  Spring can’t be far away now, right? RIGHT?
  • More love for the Library! Taste of Soul Sunday is back, and this event is really picking up steam! Check out all the events; there are some kids events that look fantastic, including the dance and drum troop Jewel of Africa. Dancing and drumming at a cultural event? It’s almost too much awesome for me.
  • Also on Sunday, come and hang out with me at the Griffins game! It’s a nice, early game (4:00).  Better yet – get discounted tickets AND make a donation to the Kroc Center all at once!  Follow this promotion link and enter “BIGBINDER” as the promo code.

Tasty Tuesday – Wei Wei Palace

Wei Wei PalaceTo kick off the Tasty Tuesday series, I’m going to re-post a visit we had to the Wei Wei Palace.  It’s original title was, “You Did WHAT In The Palace?” and was published August 28, 2007 I hope you enjoy it. I miss those days!!

I was first introduced to the Wei Wei Palace by my father, who said he had read that it was the best Dim Sum restaurant in West Michigan. However, we weren’t sure of the pronunciation, and called it the “Wee Wee Palace” until we stood corrected (and just a smidge embarassed).

Right now, you might be saying, “my kids won’t eat that kind of food.” Or, you may be saying, “Woman? What on earth are you talking about?”

OK let me start with a brief introduction to Dim Sum.  It is a ‘light meal’.  More like an appetizer or snack than an actual meal. It is Chinese, and the food usually comes in little metal or bamboo steamer baskets.  Some of it is fried or boiled, and comes on a plate.  If you have been to San Chez, you kind of get the idea. If it is busy, they will bring a cart around and you choose what you want, but if it is slow you place your order with a waiter and they bring it from the kitchen.

You order several different things and share rather than an ‘entree’. The first time we went with Grandpa Binder, several months ago, we didn’t know this.  We ordered so much food our table was overflowing, and we kept asking for the cart to come back by. We were truly tourists in our own town, but not the good way. We were just being American pigs. Oh well, we left a good tip (or my Dad did, anyway).

A.P., Maybelle and I went again for Tasty Tuesday. This time, being seasoned Dim Summers, we ordered just a few things. The waiter looked at me a little puzzled. I asked him if I ordered too much food, and he said no, but they were all desserts. I switched it up a bit, sat back, and waited for our first little basket of goodies to arrive.

Meanwhile, my children were fully entertained by the fish tank. This is not the tropical, colorful, serene fish tank to watch while you are waiting for your meal. This is more the “we’re about to be your meal” type of tank, but my kids loved it anyway.

There is a big picture on the wall, which A.P. impressed me to no end by identifying  as the Great Wall of China.  So I did choose the right preschool after all! I thought. My proud parental beaming ended when he explained that he knew that from watching Little Einsteins.

They also entertained themselves by playing with the chopsticks, which Mommy is not going to tell you again, those are NOT DRUMSTICKS I calmly explained that some other cultures used different utensils.

The first round arrived just in time. We got ‘sesame balls’ which are these round (duh) doughy things with almond paste inside and sesame on the outside. A.P. loved these, I think because he associated them with Sesame Street (note to self; lay off the TV). Are these not dessert? Well, whatever, they were really good.

Pretty soon some awesome spring rolls showed up, along with several different dips and sauces.  We like our dips in the Binder household, so while I’m sure we did the Cantonese culinary equivalent of putting ketchup on a filet mignon, we tried them all.

We had several other dumplings, the highlight of which was a fried meat dumpling which Maybelle found ‘too sticky’ but A.P. really liked.  They both ate a tofu dish, but I think it was because I told them it was eggs.

Then the dessert came; I thought. It was a sweet lotus paste donut type roll that was incredibly good.  I guess it wasn’t dessert though, because then some steamed rice packets arrived.  We were all way too full to eat, so we took those home, along with a few other leftovers, for later.

One great thing about Wei Wei is that in the same shopping center is an Asian grocery store.  They have rows and rows of noodles, and you want tea? They got your tea right here. Aisles of it.

I let the kids each choose one thing to buy, and unfortunately, A.P. had his heart set on a gumball from the machine outside the store. Maybelle chose a cute little package with a friendly-looking cartoon bear on it and I was extremely disappointed when it had chocolate in it. When I was young and my parents traveled, they brought us back candy from Asia in cute little packages with bears on it and looked like candy; but it was dried seaweed or something awful like that. I wanted to laugh at provide the same cultural experiences for my children that my parents provided for me.

So by all means, you should visit the Wei Wei Palace. Oh, and by the Wei, it is pronounced Way Way Palace for those of you not already in the know…

President’s Day

February. Ugh.

I could end this post right there and have the majority of you agree wholeheartedly; but let’s press on together and make the most of this, shall we?

It was mighty generous of Presidents Lincoln and Washington both to be born in February so we can celebrate Presidents Day in this otherwise rather bleak month. I have a special fondness for President Lincoln.

  • First, because I went to the University of Georgia and that whole Civil War thing we don’t really think about much? Yeah – it’s still a big deal there.  We spent a lot of time studying the War, and the biggest takeaway I got was that Lincoln was an amazing leader.
  • Second, I am related to his wife, Mary Todd Lincoln.  I make less of this fact than I do of my kinship with Maybelle Carter, but it’s still a source of ancestral pride. Even if she was a little crazy.
  • Third, the house I grew up in was on Lincoln Street, which goes a long way towards cementing my favoritism.

We can learn more about Lincoln, Washington and all of the presidents from our homeboy, Gerald FordThe Ford Museum website has a great educational resource; mainly for upper elementary and middle school kids but some of the activities can be adapted for the young ones.

The Circle Theatre will be presenting “Honest Abe” at the Gerald R Ford Museum on February 17th and 18th.  I’m going to play the Country Day Homeschool card and see if I can get tickets for Maybelle and me.  For $5 each, we get to see the presentation, which is geared toward kids in Kindergarten through 5th grade and includes admission to the museum.

And of course, the cherries.  I posted a Cherry Pie recipe yesterday to round out your President’s Day celebration!

Recipe Roundtable – Cherry Pie for Presidents Day!

Presidents’ Day is coming up! Check back in with me tomorrow for some great ideas to celebrate it.  For now, let’s just eat.  I LOVE cherries and I got this recipe from the free Valentine’s Day Cherry Cookbook I told you all about earlier this week.  We picked cherries this summer and froze them; I don’t think they are the tart ones, but I’m going to live on the edge and use sweet cherries.

Traditional Cherry Pie

  • 4 cups frozen unsweetened tart cherries
  • 1 cup granulated sugar
  • 3 tablespoons quick-cooking tapioca
  • 1/2 teaspoon almond extract
  • Pastry for 2-crust, 9-inch pie
  • 2 tablespoons butter

It is not necessary to thaw the frozen cherries. Combine frozen cherries, granulated sugar, tapioca and almond extract in a large mixing bowl; mix well. Let stand 15 minutes.

Line a 9-inch pie plate with pastry; fill with cherry mixture. Dot with butter. Adjust top crust, cutting slits for steam to escape, or cut top crust into strips and make a lattice-top pie.

Bake in a preheated 400-degree oven 50 to 55 minutes, or until crust is golden brown and filling is bubbly.

Makes 8 servings.
