It was so good I did something I have never done in 9 years of marriage: I served the same meal two nights in a row. Everyone loved it!

I think you could easily use instant mashed potatoes, but I had some that needed to be used up so I just made my own.

One of the ingredients I used was Country Bob’s Sauce; I had the chance to review it a while ago and I’ve been using it ever since.  I got in contact with the good people at Country Bob and they’d like to give one of you a cookbook! Cowboy Meatloaf

  • 1 1/2 pounds ground chuck
  • 1/3 cup bread crumbs (which frankly I forgot to put in, and it worked out fine)
  • 1 egg, slightly beaten

  • 2 tbsp taco seasoning (one packet)
  • 6 large potatoes
  • 2/3 cup whole milk (my family only drinks whole milk so it’s all I had, it is probably OK with other kinds though)
  • 1 tbsp butter
  • 3/4 cup French’s onions
  • salt and black pepper
  • 1 cup shredded cheese (whatever kind, it all works)
  1. Preheat oven to 375°.
  2. Combine ground chuck, bread crumbs, egg, Country Bob’s Sauce, and taco seasoning.DSCN0937 150x150 Recipe Roundtable   Cowboy Meatloaf AND A GIVEAWAY!
  3. Mix thoroughly and press into a casserole dish.  Bake for 20 to 25 minutes until cooked all the way through.  Carefully pour off any grease.DSCN0940 150x150 Recipe Roundtable   Cowboy Meatloaf AND A GIVEAWAY!
  4. While that is baking, boil water in a stockpot or very large sauce pan.  Wash and cut up the potatoes while the water is heating up.  Peel if your family doesn’t like skins in the mashed potatoes.
  5. Boil the potatoes until they are soft, about 20 minutes.  Drain in a colander.
  6. Return potatoes to the pan.  Add milk and butter and mash potatoes with a masher (what is that thing called? A masher, right?).  When all three ingredients are incorporated, add the onions.  Season to taste with salt and pepper.
  7. Spread the mashed potatoes over the meat, all the way to the edges.  Sprinkle the cheese over all of it.
  8. Bake for another 15 minutes.
