Recipe Roundtable – Corned Beef

My Dad always makes an awesome Chistmas Eve meal for us.  We spend the night there and it’s snowy and cozy.  And because my dad is a fantastic cook, it’s tasty too.  This recipe for Corned Beef comes from one of his Christmas Eve meals and has since become Maybelle’s favorite food.

A note on the meat (otherwise entitled: “Learn from my cheapness”) - make sure it’s not one of those “solution added” cuts.  It should be real meat.  Otherwise, it will be chewy and salty.  Also, throw away the spice packet that sometimes comes with corned beef.  What I’m about to give you is waaaaay better.

Make it ahead of time and keep it refrigerated if you’d like.  It will strengthen the flavor and smell incredible even before it goes into the oven.

  • 3-4 pound Point or Blade cut of beef.  (Some people use brisket, but I prefer this cut)
  • 2 oranges, sliced
  • 2 onions, sliced
  • 4 celery stalks cut in half
  • 2 cloves of garlic, minced
  • 3 bay leaves
  • 2 tablespoon of dill
  • 1 tablespoon dried rosemary
  • 12 whole cloves
  • 6 whole cinnamon sticks

Layer aluminum foil in a roasting pan, leaving enough so that you can ‘wrap’ the beef up for cooking.  Put half of the everything (except the meat) on the bottom of the pan.

Put the meat on top of this, then put the second half of everything on top.  Close up foil, not too tight.

Bake for 3 1/2 hours at 325, depending on size.  You can look at the packaging to see how many hours exactly the piece of meat should cook.

Frazzle Free Holiday Travel

Are you guys following along with the “8 Weeks To A Frazzle Free Christmas” plan from Families With Purpose? It’s a day-by-day breakdown of what you need to do now so you can enjoy Christmas when it gets here.  It is sort of like FlyLady’s Holiday Guide, except you can sign up for email reminders every day instead of printing it off, intending to put it in a binder, and leaving it on your desk until you recycle it in February.  Not that you would do that. Or that I would do that.  But those other people might.

If this is the first you’ve heard of it, just jump in;  it’s only day 11 a lot of it so far is just checking and re-checking stuff.

One thing you need to get taken care of by the end of the week (according to the guide) is holiday travel.  I know, doesn’t it just make your stomach hurt? The better prepared you are, the easier it will be.  If you need reservations (not if you have reservations – we all have reservations about holiday travel) check out TripAdvisor.  It is absolutely my favorite, because there are TONS of reviews and it ranks your search by rating and price so you can find the good values.

You also want to comparison shop, so cross check what you find with another site like Hotels.com which isn’t as robust with reviews, but will give you pricing information.  If the whole bedbug issue is freaking you out like it is me – here is an article about avoiding those little buggers.

Once you know who you’ll be flying, where you’ll be staying, and what you’ll be driving, enter the zipcode for any of the deal sites you use at home.  Try:

and see if they have offers available where you will be traveling. You don’t have to buy or print anything right now, just keep yourself in the loop of what is happening at your travel destination so you can buy and print off coupons before you go.  If you have the Entertainment Book for your own city, you can register it on their site and then print off coupons for any area, too.

It’s good to have fresh material when traveling with children.  I prefer that material be digital because it takes up less space. Don’t forget that you can return Redbox and Blockbuster movies at any kiosk, so see if there will be any near your hotel.  That way you can rent one at home, and return it on the road or vice versa.  If you’re traveling by car, sign up for Audible.com and download children’s books.  Wait until you’re ready to travel and do a free trial for 14 days.

Speaking of taking up less space, traveling with a load of gifts for your family and friends – and then traveling home with a load of gifts from your family and friends can be difficult. Extra luggage fees will kill your travel budget, so look into shipping the gifts ahead of time.  UPS offers “Luggage Solutions” you might want to check in to.

You can also ship home souveniers, groceries you scored using double coupons because you are from a market that does not offer them, or you dirty laundry.  They won’t tell.

Monster Brownie Cupcakes

Remember yesterday when I told you about our Spooky Restaurant Menu? I had second thoughts.  A careful, detailed nutritional analysis revealed that the menu was approximately 75% sweets.  Sweets we do not need to consume as we head into Trick or Treatin’ Season.

I decided to make the Monster Brownies as cupcakes, but I have to admit I had an ulterior motive.

I wanted a new cupcake carrier.  This one by The Good Cook as a matter of fact.  I like that you can bake in it, and then use the cover to take it with you.  Plus, there is a nifty little display stand so you can show off your good work. I went to WalMart in search of one, but the store by my house didn’t have any

So sad.

But the (scary) show must go on.  We persevered and made the Monster Brownie Cupcakes.  I just used a regular box of brownies, and put them in cupcake tins instead of a pan.  I baked them for 18 minutes; which is less than the directions said.

Then we let them cool, and mixed food coloring into white frosting.  We used Crunch Berries as “eyes” for the monsters.  Trust me when I say that while it looks a little lame; it’s exactly what my kids wanted.

I’m still sending the leftovers to work with my husband.  If there are any…

SO Spooky.

I’ve gradually embraced Halloween.  It’s still not my favorite holiday, but at least I can kind of hang now when it comes to doin’ it up for my kids. Their school doesn’t have Halloween Parties, so it’s not like I can outsource the celebration aspect. 

I asked the kids what they thought would be on a menu in a Halloween Restaurant.  Maybelle’s was – a bit abstract, as she tends to be.  A.P.’s was pretty good, and he gets extra 7-year-old-boy points for working the word “butt” into it, albeit a little clumsily.  Diners can choose from the following; to be served in plastic pumpkins and (plastic) cauldrons, AND using my super cheap Kohl’s clearance Halloween place mats and napkins that I got in January:

  • Petrified Pork
  • Spooky Salad
  • Monster Brownies
  • Peanut Butter Eyeballs
  • Blood
  • HamburGRRRRR Butt
  • Ghost Pizza
  • Worm Spaghetti
  • At Spooky (A.P.’s)”

Thursday also brings us “It’s The Great Pumpkin, Charlie Brown“.  It’s later than my kids usually stay up, but they just have their not-Halloween parties at school the next day so it’s not like they need to be super well rested for chowing down on Harvest party delicacies.

Is this madness happening all across the state? Because if it is, you know who I feel for? Those punks in Detroit.  I mean, how will they know which night they need to set fire to abandoned buildings if they don’t even know when Devil’s Night is?

It’s a much tamer holiday here, thank goodness. We just need to worry about getting our money’s worth out of those costumes by gallivanting around town in them all weekend.

Saturday you could squeeze this in even if you are in a “trick or treat” zone later; the Literary Life Bookstore is having their annual “Litlife Halloween Party” with crafts, stories, and treats from 11:00AM-12:00PM.

And in addition to (or instead of) actual, official trick or treating events on Sunday you could go to the Halloween Hoopla at Woodland Mall  from 3:00-5:00 PM

Have fun.  Be very scary.  And of course, get lots of good candy!

We might have one more warm snap (if there is there such a thing. After all, why must snaps always be cold?), but camping season is pretty much over in Michigan.

Recipe Roundtable – Sausage Filled Crêpes

Did you try the recipe for basic crêpes yet? I had quite a few left over, so I froze them.  And then I dragged them back out, to make this very yummy dish: 

Sausage Filled Crêpes

1 pound ground pork sausage

1 small onion, diced

2 cups (8 ounces) shredded Cheddar cheese, divided

1 (3-ounce) package cream cheese

1/2 teaspoon dried marjoram

crepês

1/2 cup sour cream

1/4 cup butter, softened

1/4 cup chopped fresh parsley

Cook sausage and onion in a large skillet over medium heat, stirring until sausage crumbles and is no longer pink. Drain well. Return sausage to skillet; add 1 cup Cheddar cheese, cream cheese, and marjoram, stirring until cheeses melt.

Spoon 3 tablespoons filling down center of each crêpe.

Roll up, and place, seam side down, in a lightly greased 13- x 9-inch baking dish.

Bake, covered, at 350° for 15 minutes. Stir together sour cream and butter; spoon over crêpes. Bake 5 more minutes. Sprinkle with remaining 1 cup Cheddar cheese and parsley.

**Make sure you don’t accidentally use 1/2 a cup of butter, because your crêpes will be delicious but swimming in butter.  It’s true. It happened to me. **

Fun Free and Frugal October 22-27

There are so many things going on this week it’s almost too much!  Don’t get overwhelmed.  Just pick a few fun things and let the rest go.  It’s very possible that I am talking directly to myself with that advice; when I see lots of free and frugal fun I get so excited I’m  frustrated that I can’t take part in everything.

Wendys Pick Two – A contest!

Zhu Zhu, Boo At The Zoo, Tickets for YOU!

Do your kids have their Halloween costumes yet? I hope so! The Zoo Goes Boo at the John Ball Park Zoo starts Friday, where your kids can go trick or treat, check out the decorations, live entertainment, animals, and kids activities. 

It runs for two weekends, but if you come on Saturday please stop by the Zhu Zhu Pets table and see ME!! That’s right! I will be handing out candy and doing some fun and special Zhu Zhu-related activities, such as arena fighting.  Just kidding.  My arena fighting days are long past, so I’ll just stick with the candy.

Budget Boosters – Pedialyte Singles (again)

I was hitting the deal and coupon websites HARD this weekend, because since Friday (it seems so long ago, now…) we have learned the following:

  1. Our car needs $1,500 in repairs.
  2. Our escrow account is short and we can either pay an extra $150 a month (a LOT for us!!) forever, or cover the shortage in a ‘lump’ sum amount of $1,200.  That is not a ‘lump’, Chase Mortgage.  I think the wording should be changed to “freakin’ truckload of cash’ sum. 

 

Just as I was dreaming of replacing our yucky old kitchen flooring, And buying a new vacuum cleaner.  And signing up at Weight Watchers again.  And going to the Blissdom blogging conference.

I went through the proper stages. 

  • Denial (maybe the mechanics AND the bank will realize they made mistakes!)
  • Anger (swear words I’ll spare your delicate ears from hearing)
  • Bargaining (Dear God.  If I lose weight on my own – can I still go to Blissdom?)
  • Depression (fixed that with beer) and
  • Acceptance (BRING IT ’cause I CAN DO THIS)

So this Budget Boosters thing? We’re really going to give it a go.  Also, I’ve changed my sidebar (the farthest right column) so that only displays deals. 

I know I just wrote about Pedialyte Singles the other day.  I also wrote to the company I worked with to promote this and thanked them for letting me be a part of it, because dehydration on is so awful for kids and the ‘juice box’ look to these will really make a difference in keeping kids hydrated when they’re sick.
